Over 100 of Western Australia’s hottest young apprentice chefs and hospitality students showed off their skills in spectacular style at the 16th Hospitality Youth Skills Showcase held on Sunday 25th May 2014 at the Hyatt Regency Perth.
The gala event proudly coordinated by Hospitality Group Training WA, treated 500 guests to a superb
5-course dinner, a range of fabulous fine wines, and an entertainment extravaganza.
The evening was opened by Hon. Peter Collier MLC, Minister for Education; Aboriginal Affairs; Electoral Affairs andhosted by Christina Morrissy. Guests included government ministers, national and state presidents of major hospitality & tourism industry organisations, media personalities, leading executive chefs, restaurateurs, hoteliers and the supporting public.
The kitchen brigade responsible for designing and creating the spectacular 5-course menu around the “I Go to Rio” theme was lead by a team of determined young stars employed by Hospitality Group Training:

The kitchen team created an inspired menu including Quail Ballotine with Brazil Nut & Broccoli Farce with Paw Paw Salad, Pork Collar Butt Empanada served with a Tomato and Capsicum Salsa, Kerrigan Valley Beef Brisket, Bean Salsa and Chimichurri, Banana & Passionfruit Parfait, Chocolate Hazelnut Streusel with a Pineapple Compote.
Food and beverage service throughout the evening was provided by a specially selected team of hospitality students from Challenger Institute of Training, Polytechnic West and Hospitality Group Training.
The mood was set with the ballroom at the Hyatt spectacularly decorated in a colourful Carnivale theme, full of vibrance & exuberance.
Entertainment was provided by an array of incredibly talented young performers including an explosive opening mix of percussion, samba and capoeira from the Tropical Funk Merchants and a dance spectacular by Green Room Entertainment. Chelsea J Gibson provided upbeat tunes fresh from the Carnivale and the evening was fished off by the dancing tunes of Proof. Background music on the night came from soulful sounds of Helen Shanahan, Matt Allen and Josh Dyson.
The highlight of the evening was a spectacular parade of the apprentices and trainees involved in the Showcase, together with hospitality industry award winners from the past 12 months.
The Showcase was generously supported by many hospitality food and beverage suppliers.
Iain McDougall, General Manager of Hospitality Group Training said the Showcase highlighted the positive aspects of youth employment, and was a fantastic opportunity to publicly celebrate the contribution that young people make to the success of the industry.
“With skill shortages still impacting severely on the hospitality industry, this event is extremely important in maintaining profile of apprentices, trainees and students in hospitality. The young people involved in the event are tomorrow’s head chefs, restaurant and bar managers” he said.
“Recent Budget announcements have made it tougher to maintain momentum with the recruitment of apprentices and trainees to hospitality however I am hoping that nights like this will remind everybody that we cannot lose sight of building the talent pool for our future”.
